- 2 cups buttermilk
- 2 eggs
- 2 tbsp butter
- 2 tsp baking powder
- 1 tsp sugar
- 1/2 tsp salt
- 1 tsp vanilla extract
- Vegetable oil for greasing the pan
Instructions
- In a large bowl whisk together flour, baking powder, sugar, and salt.
- In another bowl beat the eggs, then whisk in buttermilk, melted butter, and vanilla extract.
- Combine the wet and dry ingredients, stirring just until a few lumps remain.
- Heat a non-stick skillet over medium heat and lightly coat with oil.
- Pour about 1/4 cup batter onto the skillet for each pancake; cook until bubbles form.
- Flip and cook 1-2 minutes more until golden brown.
- Serve warm with butter and maple syrup.
Notes
Let the batter rest for 5 minutes for extra fluffiness.
