  • 1 red bell pepper, diced
  • 2 zucchini, sliced into half-moons
  • 1 yellow onion, diced (1 cup)
  • 1 can (8 oz) tomato sauce
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ¼ teaspoon crushed red pepper flakes
  • ½ teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1 clove garlic, minced
  • ½ cup beef broth or water
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the ground beef, breaking it up, and cook until browned, about 5–7 minutes.
  3. Stir in garlic powder, salt, crushed red pepper flakes, black pepper, smoked paprika, and minced garlic; cook 1 minute.
  4. Add diced onion and red bell pepper; sauté until softened, 3–4 minutes.
  5. Toss in sliced zucchini and cook another 2 minutes.
  6. Pour in tomato sauce and broth; stir to combine.
  7. Reduce heat and simmer for 10–12 minutes, or until vegetables are tender and flavors meld.
  8. Taste and adjust seasoning if needed.
  9. Serve hot, garnished with fresh parsley.
