- 1 lb ground beef
- 1 cup uncooked white rice
- 2 cups beef broth
- 1 can (10.5 oz) cream of mushroom soup
- 1 cup shredded cheddar cheese
- 1/2 cup chopped onion
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 1 tablespoon olive oil
- Optional: chopped parsley for garnish
Instructions
- Preheat oven to 375°F (190°C).
- In a skillet over medium heat, add olive oil and sauté chopped onion until translucent.
- Add ground beef, garlic powder, paprika, salt, and pepper. Cook until browned. Drain excess fat.
- In a large mixing bowl, combine the cooked beef mixture, uncooked rice, beef broth, and cream of mushroom soup. Stir well.
- Pour mixture into a greased 9×13-inch baking dish and cover tightly with foil.
- Bake for 45 minutes, or until rice is tender.
- Remove foil, sprinkle shredded cheese on top, and bake uncovered for an additional 10 minutes until cheese is melted and bubbly.
- Garnish with chopped parsley if desired and serve warm.
Notes
You can swap cream of mushroom for cream of chicken if preferred. Add frozen peas or corn for extra veggies.
