Description

A comforting Italian stew featuring tender chicken, sweet onions, bell peppers, and a rich tomato sauce, perfect for weeknight dinners.


Ingredients

  • 8 chicken pieces (thighs or drumsticks)
  • 1 large onion, sliced
  • 1 bell pepper, sliced
  • 24 oz crushed tomatoes
  • 1 tsp Italian seasoning
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 1/2 cup chicken broth
  • 1 tbsp red wine (optional)
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season the chicken pieces with salt and pepper.
  2. Heat olive oil in a large pot over medium-high heat and brown the chicken on both sides, about 4 minutes per side. Remove and set aside.
  3. Add minced garlic and sliced onion to the pot, sauté until softened, 2-3 minutes.
  4. Stir in the sliced bell pepper and mushrooms, cooking another 3 minutes.
  5. Pour in the crushed tomatoes, chicken broth, red wine (if using), and Italian seasoning, scraping up any browned bits.
  6. Return the chicken to the pot, bring to a simmer, then reduce heat to low, cover, and cook for 35-40 minutes until chicken is cooked through.
  7. Taste and adjust seasoning, then garnish with fresh parsley before serving.

Notes

For a thicker sauce, simmer uncovered for the last 10 minutes.
