- 2 chicken fillet
- 6 cups chicken broth
- 2 carrots, sliced
- 2 celery stalks, diced
- 2 cups egg noodles
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon dried thyme
- 2 tablespoons fresh parsley, chopped
- Optional: 1 lemon wedge for serving
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, sauté until softened, about 3 minutes.
- Stir in thyme, salt, and pepper.
- Add chicken fillet pieces and sear lightly on all sides.
- Pour in chicken broth and bring to a boil.
- Reduce heat and simmer for 15 minutes, skimming any foam.
- Add sliced carrots and diced celery, continue simmering for 5 minutes.
- Stir in egg noodles and cook according to package directions, about 6 minutes.
- Remove from heat and stir in fresh parsley.
- Serve hot with a lemon wedge if desired.
Notes
For a richer broth, use homemade chicken stock. Adjust seasoning to taste.
