Ingredients

  • 2 chicken fillet
  • 6 cups chicken broth
  • 2 carrots, sliced
  • 2 celery stalks, diced
  • 2 cups egg noodles
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried thyme
  • 2 tablespoons fresh parsley, chopped
  • Optional: 1 lemon wedge for serving

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, sauté until softened, about 3 minutes.
  3. Stir in thyme, salt, and pepper.
  4. Add chicken fillet pieces and sear lightly on all sides.
  5. Pour in chicken broth and bring to a boil.
  6. Reduce heat and simmer for 15 minutes, skimming any foam.
  7. Add sliced carrots and diced celery, continue simmering for 5 minutes.
  8. Stir in egg noodles and cook according to package directions, about 6 minutes.
  9. Remove from heat and stir in fresh parsley.
  10. Serve hot with a lemon wedge if desired.

Notes

For a richer broth, use homemade chicken stock. Adjust seasoning to taste.
