- 8 ounces uncooked whole wheat rotini
- 1/2 cup hummus
- 3 tablespoons Italian salad dressing
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 4 cups fresh baby spinach
- 1 cup cubed cooked Chicken Filet
- 2 cups cherry tomatoes, halved
- 1 can (2-1/4 ounces) sliced ripe olives, drained
- 1/4 cup crumbled feta cheese
- 1 teaspoon lemon juice
- 1 tablespoon olive oil
Instructions
- Cook the whole wheat rotini according to package directions until al dente, then drain and rinse under cold water.
- In a large bowl combine hummus, Italian salad dressing, lemon juice, olive oil, salt, and pepper to create the dressing.
- Add the cooked rotini, cubed chicken filet, cherry tomatoes, olives, and lemon juice to the bowl.
- Toss everything together until the pasta is evenly coated with the dressing.
- Fold in the fresh baby spinach and crumbled feta cheese.
- Serve immediately or refrigerate for up to 2 hours for a cooler salad.
Notes
For extra freshness, add a handful of sliced cucumber or red onion.
