A refreshing, protein‑packed chicken pasta salad featuring whole‑wheat rotini, creamy hummus dressing, spinach, tomatoes, olives, and feta.


Ingredients

  • 8 ounces uncooked whole wheat rotini
  • 1/2 cup hummus
  • 3 tablespoons Italian salad dressing
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 4 cups fresh baby spinach
  • 1 cup cubed cooked Chicken Filet
  • 2 cups cherry tomatoes, halved
  • 1 can (2-1/4 ounces) sliced ripe olives, drained
  • 1/4 cup crumbled feta cheese
  • 1 teaspoon lemon juice
  • 1 tablespoon olive oil

Instructions

  1. Cook the whole wheat rotini according to package directions until al dente, then drain and rinse under cold water.
  2. In a large bowl combine hummus, Italian salad dressing, lemon juice, olive oil, salt, and pepper to create the dressing.
  3. Add the cooked rotini, cubed chicken filet, cherry tomatoes, olives, and lemon juice to the bowl.
  4. Toss everything together until the pasta is evenly coated with the dressing.
  5. Fold in the fresh baby spinach and crumbled feta cheese.
  6. Serve immediately or refrigerate for up to 2 hours for a cooler salad.

Notes

For extra freshness, add a handful of sliced cucumber or red onion.
