Ingredients

  • 3 medium carrots
  • 3 medium stalks celery
  • 2 cloves garlic
  • 1/2 medium bunch fresh thyme (about 10 sprigs), or 1 teaspoon dried thyme
  • 6 tablespoons unsalted butter, divided
  • 1 1/2 teaspoons kosher salt, plus more as needed
  • 1/2 teaspoon freshly ground black pepper, plus more as needed
  • 1/4 cup all-purpose flour
  • 2 cups or 1 (14.5-ounce) can low-sodium chicken broth
  • 1 cup whole or 2% milk
  • 1 pound cooked boneless chicken (about 4 cups)
  • 1 cup frozen peas (do not thaw)
  • 1 (about 16-ounce) can refrigerated jumbo- or grand-size biscuits, such as Pillsbury Grands Buttermilk

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Dice the onion, carrots, and celery. Mince the garlic and strip thyme leaves from stems if using fresh.
  3. Melt 2 tablespoons of butter in a large skillet over medium heat. Add the vegetables, thyme, salt, and pepper. Cook until softened, about 10 minutes.
  4. Add remaining butter, then stir in flour and cook for 1-2 minutes to form a roux.
  5. Gradually whisk in chicken broth and milk. Bring to a simmer and cook until thickened, about 5 minutes.
  6. Stir in cooked chicken and peas. Remove from heat.
  7. Transfer filling into a baking dish. Separate the biscuits and place them on top of the filling.
  8. Bake for 20-25 minutes, or until biscuits are golden and cooked through.
  9. Let sit for a few minutes before serving.

Notes

For extra richness, brush the tops of the biscuits with melted butter before baking. Use rotisserie chicken to save time.
