Description

Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 lb ground beef
  • 2 cans kidney beans (15 oz each), drained and rinsed
  • 1 can black beans (15 oz), drained and rinsed
  • 2 cans diced tomatoes (14 oz each)
  • 1 can tomato paste (6 oz)
  • 2 cups beef broth
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon oregano
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, fresh cilantro, chopped green onions

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onions, garlic, and bell peppers. Sauté until softened.
  3. Add ground beef and cook until browned, breaking it apart as it cooks.
  4. Stir in chili powder, cumin, smoked paprika, oregano, salt, and pepper. Cook for 1–2 minutes.
  5. Add kidney beans, black beans, diced tomatoes, tomato paste, and beef broth. Stir to combine.
  6. Bring to a boil, then reduce heat to low. Cover and simmer for 45 minutes, stirring occasionally.
  7. Adjust seasoning as needed and simmer uncovered for an additional 15 minutes to thicken.
  8. Serve hot with optional toppings.

Notes

For extra depth of flavor, let the chili simmer longer. It tastes even better the next day after the flavors have melded.
