- 2 tablespoons olive oil
- 1 large onion, diced
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 lb ground beef
- 2 cans kidney beans (15 oz each), drained and rinsed
- 1 can black beans (15 oz), drained and rinsed
- 2 cans diced tomatoes (14 oz each)
- 1 can tomato paste (6 oz)
- 2 cups beef broth
- 2 tablespoons chili powder
- 1 tablespoon ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon oregano
- Salt and pepper to taste
- Optional toppings: shredded cheese, sour cream, fresh cilantro, chopped green onions
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onions, garlic, and bell peppers. Sauté until softened.
- Add ground beef and cook until browned, breaking it apart as it cooks.
- Stir in chili powder, cumin, smoked paprika, oregano, salt, and pepper. Cook for 1–2 minutes.
- Add kidney beans, black beans, diced tomatoes, tomato paste, and beef broth. Stir to combine.
- Bring to a boil, then reduce heat to low. Cover and simmer for 45 minutes, stirring occasionally.
- Adjust seasoning as needed and simmer uncovered for an additional 15 minutes to thicken.
- Serve hot with optional toppings.
Notes
For extra depth of flavor, let the chili simmer longer. It tastes even better the next day after the flavors have melded.
