Description

A moist and flavorful banana bread packed with chocolate chips and crunchy pecans.


Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon table salt
  • ½ cup unsalted butter, melted
  • ½ cup granulated sugar
  • 2 large eggs, room temperature
  • 2 cups very ripe mashed bananas (about 34 bananas)
  • ¾ cup mini chocolate chips
  • ½ cup pecans, chopped
  • 1 teaspoon vanilla extract
  • 2 tablespoons mini chocolate chips (for topping)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. In a bowl whisk together the two flours, baking powder, baking soda, and salt.
  3. In a separate bowl beat the melted butter with sugar until combined.
  4. Add eggs one at a time, mixing well after each addition.
  5. Stir in vanilla extract.
  6. Fold in the mashed bananas until smooth.
  7. Add the dry ingredients to the banana mixture and stir until just combined.
  8. Gently fold in the mini chocolate chips and chopped pecans.
  9. Pour batter into the prepared loaf pan and smooth the top.
  10. Sprinkle the remaining mini chocolate chips over the surface.
  11. Bake for 55 minutes or until a toothpick inserted in the center comes out clean.
  12. Allow the bread to cool in the pan for 10 minutes then transfer to a wire rack to cool completely.

Notes

Optional: add ¼ cup sour cream for extra moisture.
