- 1 1/2 cups all-purpose flour
- 1 egg
- 1 1/4 cups milk
- 1/2 cup chocolate chips
- 2 tablespoons granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 2 tablespoons melted butter
- Cooking spray or oil for the pan
Instructions
- In a large bowl whisk together flour, sugar, baking powder, baking soda, and salt.
- In another bowl beat the egg with milk, melted butter, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and stir until just combined; a few lumps are fine.
- Fold in the chocolate chips gently.
- Heat a non-stick skillet or griddle over medium heat and lightly coat with cooking spray or oil.
- Pour about 1/4 cup of batter onto the hot surface for each pancake.
- Cook until bubbles form on the surface and edges look set, about 2 minutes, then flip and cook another 1-2 minutes until golden brown.
- Transfer to a plate and repeat with remaining batter.
- Serve warm with maple syrup or your favorite toppings.
Notes
For extra fluffiness, let the batter rest for 5 minutes before cooking. Adjust heat as needed to prevent burning.
