Ingredients

  • 1 egg
  • 1 1/4 cups milk
  • 1/2 cup chocolate chips
  • 2 tablespoons granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 tablespoons melted butter
  • Cooking spray or oil for the pan

Instructions

  1. In a large bowl whisk together flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl beat the egg with milk, melted butter, and vanilla extract until smooth.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined; a few lumps are fine.
  4. Fold in the chocolate chips gently.
  5. Heat a non-stick skillet or griddle over medium heat and lightly coat with cooking spray or oil.
  6. Pour about 1/4 cup of batter onto the hot surface for each pancake.
  7. Cook until bubbles form on the surface and edges look set, about 2 minutes, then flip and cook another 1-2 minutes until golden brown.
  8. Transfer to a plate and repeat with remaining batter.
  9. Serve warm with maple syrup or your favorite toppings.

Notes

For extra fluffiness, let the batter rest for 5 minutes before cooking. Adjust heat as needed to prevent burning.
