A hearty Mexican-inspired breakfast sandwich featuring a crispy frozen biscuit, savory chorizo, a sunny-side-up egg, melted chihuahua cheese, guacamole, pico de gallo, and fresh cilantro.

- 3 oz chorizo sausage patty
- 1 fried egg, sunny side up
- 2 tbsp guacamole
- 2 tbsp pico de gallo
- 1 slice chihuahua cheese
- 3 cilantro sprigs
- 1 frozen biscuit dough round
- 1 tsp cilantro lime seasoning
- 1/2 tsp ancho chile seasoning
- 1 tbsp butter (for cooking)
- Salt and pepper to taste
Instructions
- Preheat waffle iron and cook the frozen biscuit dough until golden and crisp, about 5 minutes; set aside.
- Season the chorizo patty with cilantro lime and ancho chile seasoning, then pan-fry in butter over medium heat until browned and cooked through, about 4 minutes per side.
- In the same pan, fry an egg sunny side up until the whites set but the yolk remains runny.
- Assemble the sandwich: place the biscuit on a plate, layer with the chorizo patty, then the fried egg, and top with the chihuahua cheese slice to melt slightly.
- Top with guacamole and pico de gallo, and garnish with cilantro sprigs.
- Serve immediately while hot.
Notes
For extra zing, add a squeeze of lime juice or serve with hot sauce on the side.
