Description
Spicy, tangy glazed chicken wings perfect for celebrating Cinco de Mayo. Served with crisp lettuce leaves for a fresh crunch.

- 1 tablespoon canola or vegetable oil
- 2 1/2 lb chicken wings, cut apart at joints, wing tips discarded
- 2 medium green onions, thinly sliced including tops (about 2 tablespoons)
- 1 teaspoon crushed red pepper flakes
- 2 cans (12 oz each) lemon-lime carbonated beverage
- 1 can (4.5 oz) Old El Paso™ chopped green chiles, drained
- 1 package (1 oz) Old El Paso™ taco seasoning mix
- 10 lettuce leaves, if desired
- 2 cloves garlic, minced
- 2 tablespoons honey
- 1 tablespoon lime juice
- Salt and freshly ground black pepper to taste
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with foil.
- Pat chicken wings dry, season lightly with salt and pepper, and toss with oil.
- Arrange wings in a single layer on the baking sheet and bake for 25 minutes.
- Meanwhile, combine carbonated beverage, green chiles, taco seasoning, garlic, honey, lime juice, and red pepper flakes in a saucepan; simmer 5 minutes until slightly thickened.
- Remove wings, brush generously with the glaze, and return to oven for another 10 minutes, brushing once more halfway through.
- Transfer wings to a serving platter, drizzle with any remaining glaze, and garnish with sliced green onions.
- Serve with lettuce leaves on the side for wrapping, if desired.
Notes
For extra crispiness, broil wings for 2-3 minutes at the end. Adjust heat level by adding more red pepper flakes.
