Cinco De Mayo Glazed Chicken Wings

Description

Spicy, sweet, and tangy glazed chicken wings perfect for celebrating Cinco de Mayo. Easy to make with pantry staples and a fizzy soda glaze.


Ingredients

  • 1 tablespoon canola or vegetable oil
  • 2 1/2 lb chicken wings, cut apart at joints, wing tips discarded
  • 2 medium green onions, thinly sliced including tops (about 2 tablespoons)
  • 1 teaspoon crushed red pepper flakes
  • 2 cans (12 oz each) lemon-lime carbonated beverage
  • 1 can (4.5 oz) Old El Paso™ chopped green chiles, drained
  • 1 package (1 oz) Old El Paso™ taco seasoning mix
  • 10 lettuce leaves, if desired
  • 2 tablespoons honey
  • 1 tablespoon soy sauce
  • 1 clove garlic, minced
  • 1 teaspoon lime juice

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Pat chicken wings dry with paper towels and place on a baking sheet lined with foil.
  3. In a small bowl, whisk together honey, soy sauce, minced garlic, lime juice, and half of the soda to create a glaze.
  4. Brush wings with the glaze, reserving the rest for basting.
  5. Roast wings for 25 minutes, basting every 8 minutes with the remaining soda glaze.
  6. While wings roast, heat oil in a skillet over medium heat, add sliced green onions and red pepper flakes, sauté 1 minute.
  7. Add the remaining soda, chopped green chiles, and taco seasoning to the skillet; simmer 3 minutes to thicken.
  8. When wings are cooked through and caramelized, remove from oven and toss with the skillet sauce.
  9. Serve wings on a platter with lettuce leaves on the side, if desired.

Notes

For extra crispiness, broil wings for 2-3 minutes at the end. Adjust heat by adding more red pepper flakes.
