Description

Buttery cookies infused with lime zest and juice, topped with a hint of turbinado sugar, perfect for celebrating Cinco de Mayo. Served as ice cream sandwiches with vanilla ice cream and lime sherbet.

  • 1/2 cup unsalted butter softened
  • 1 cup sugar
  • 1 large egg
  • 5 teaspoons grated lime rind divided
  • 2 tablespoons fresh lime juice
  • 2 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/8 teaspoon table salt
  • 1 teaspoon turbinado sugar
  • 1/2 teaspoon coarse sea salt
  • 2 cups vanilla reduced-fat ice cream softened
  • 2 cups lime sherbet softened
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together softened butter and 1 cup sugar until light and fluffy.
  3. Add the egg and mix until fully incorporated.
  4. Stir in 5 teaspoons grated lime rind (reserve half) and 2 tablespoons fresh lime juice.
  5. In a separate bowl whisk together all-purpose flour, baking powder, table salt, and the remaining lime rind; then fold into the wet mixture until just combined.
  6. Drop rounded tablespoons of dough onto the prepared sheet, spacing 2 inches apart.
  7. Sprinkle each cookie with a pinch of turbinado sugar and coarse sea salt.
  8. Bake for 10-12 minutes, or until the edges are lightly golden; let cool on the sheet for 5 minutes then transfer to a wire rack.
  9. While cookies cool, soften the vanilla ice cream and lime sherbet, then scoop a generous round of each onto the flat side of a cookie and press another cookie on top to create a sandwich; repeat with remaining cookies.
  10. Serve immediately or freeze for later.

Notes

For extra festivity, garnish the cookies with a thin slice of lime zest before serving.
