Ingredients

  • 28 ounce can whole tomatoes, drained and divided
  • ½ medium onion (½ cup, 3 ounces, 85 grams), finely chopped
  • 1 clove garlic, finely minced
  • 13 Tablespoons (0.51.5 ounces) finely chopped pickled jalapeño slices*
  • 1 Tablespoon lime juice
  • 2 Tablespoons chopped fresh parsley or cilantro
  • Salt, to taste (¼ teaspoon)
  • Freshly ground black pepper, to taste (¼ teaspoon)

Instructions

  1. Drain the tomatoes, reserving any extra juice for later if desired.
  2. Finely chop the onion.
  3. Mince the garlic.
  4. Finely chop the pickled jalapeño slices, adjusting the amount to your preferred heat level.
  5. Combine the tomatoes, onion, garlic, and jalapeño in a mixing bowl.
  6. Stir in the lime juice.
  7. Fold in the chopped parsley or cilantro.
  8. Season with salt and black pepper, tasting and adjusting as needed.
  9. Let the salsa rest for 10 minutes to allow flavors to meld before serving.
