- 28 ounce can whole tomatoes, drained and divided
- ½ medium onion (½ cup, 3 ounces, 85 grams), finely chopped
- 1 clove garlic, finely minced
- 1 – 3 Tablespoons (0.5–1.5 ounces) finely chopped pickled jalapeño slices*
- 1 Tablespoon lime juice
- 2 Tablespoons chopped fresh parsley or cilantro
- Salt, to taste (¼ teaspoon)
- Freshly ground black pepper, to taste (¼ teaspoon)
Instructions
- Drain the tomatoes, reserving any extra juice for later if desired.
- Finely chop the onion.
- Mince the garlic.
- Finely chop the pickled jalapeño slices, adjusting the amount to your preferred heat level.
- Combine the tomatoes, onion, garlic, and jalapeño in a mixing bowl.
- Stir in the lime juice.
- Fold in the chopped parsley or cilantro.
- Season with salt and black pepper, tasting and adjusting as needed.
- Let the salsa rest for 10 minutes to allow flavors to meld before serving.
