Description

Ingredients

  • 2 cups all-purpose flour
  • 1 tbsp ground cinnamon
  • 2 eggs
  • 1 3/4 cups milk
  • 2 tbsp granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 2 tbsp melted butter
  • 1 tsp vanilla extract

Instructions

  1. In a large bowl whisk together flour, cinnamon, baking powder, and salt.
  2. In another bowl beat eggs, then add milk, sugar, melted butter, and vanilla; mix well.
  3. Pour the wet mixture into the dry ingredients and stir until just combined; batter should be slightly lumpy.
  4. Heat a non-stick skillet over medium heat and lightly coat with butter.
  5. Pour 1/4 cup batter onto the skillet for each pancake; cook until bubbles form on the surface, about 2 minutes.
  6. Flip pancakes and cook until golden brown, about 1-2 minutes more.
  7. Serve warm with butter and maple syrup.

Notes

For extra fluffiness, let the batter rest for 5 minutes before cooking. You can add sliced bananas or berries on top.
