Ingredients

- 2 cups all-purpose flour
- 1 tbsp ground cinnamon
- 2 eggs
- 1 3/4 cups milk
- 2 tbsp granulated sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 2 tbsp melted butter
- 1 tsp vanilla extract
Instructions
- In a large bowl whisk together flour, cinnamon, baking powder, and salt.
- In another bowl beat eggs, then add milk, sugar, melted butter, and vanilla; mix well.
- Pour the wet mixture into the dry ingredients and stir until just combined; batter should be slightly lumpy.
- Heat a non-stick skillet over medium heat and lightly coat with butter.
- Pour 1/4 cup batter onto the skillet for each pancake; cook until bubbles form on the surface, about 2 minutes.
- Flip pancakes and cook until golden brown, about 1-2 minutes more.
- Serve warm with butter and maple syrup.
Notes
For extra fluffiness, let the batter rest for 5 minutes before cooking. You can add sliced bananas or berries on top.
