- 1 lb ground beef
- 1 onion, chopped
- 1 can kidney beans
- 1 can diced tomatoes
- 1 tbsp chili powder
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 tbsp olive oil
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1 tsp salt
- 1/2 tsp black pepper
- 1 cup beef broth
- Optional toppings: sour cream, shredded cheddar cheese, chopped cilantro
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and garlic, sauté until softened.
- Add ground beef, breaking it up, and cook until browned.
- Stir in chili powder, cumin, smoked paprika, salt, and pepper; cook 1 minute.
- Add diced tomatoes, kidney beans, and beef broth; bring to a simmer.
- Reduce heat and let chili simmer for 30-40 minutes, stirring occasionally.
- Taste and adjust seasoning if needed.
- Serve hot, topped with optional sour cream, cheese, and cilantro.
