Ingredients
Scale
- 3 large ripe bananas
- 2 eggs, room temperature
- 2 cups all-purpose flour
- ¾ tsp baking powder
- 1 tsp baking soda
- ¾ cup brown sugar (light or dark)
- 1 cup chocolate chips or chopped chocolate
- ½ tsp salt
- ½ cup butter
- ½ cup Greek yogurt or sour cream
- 1 tsp vanilla extract
- Flaky sea salt (optional, for topping)
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- Melt butter in a saucepan over medium heat and cook until it turns golden brown and nutty, about 5 minutes; remove from heat and let cool slightly.
- In a large bowl whisk together the brown butter and brown sugar until smooth.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the vanilla extract and Greek yogurt (or sour cream).
- Fold in the mashed bananas until fully incorporated.
- In a separate bowl whisk together flour, baking powder, baking soda, and salt.
- Add the dry ingredients to the wet mixture and stir just until combined, avoiding overmixing.
- Fold in the chocolate chips gently.
- Pour the batter into the prepared pan and sprinkle flaky sea salt on top if desired.
- Bake for 50–55 minutes, or until a toothpick inserted into the center comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
