Ingredients

  • 2 tbsp sugar
  • 1/4 cup melted butter
  • 2 eggs
  • 2 cups buttermilk
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • non-stick cooking spray

Instructions

  1. In a large bowl whisk together flour, sugar, baking soda, baking powder, and salt.
  2. In a separate bowl beat the eggs, then stir in melted butter, vanilla, and buttermilk.
  3. Pour the wet ingredients into the dry mixture and stir until just combined; small lumps are okay.
  4. Heat a non-stick skillet or griddle over medium heat and lightly coat with cooking spray.
  5. Pour about 1/4 cup batter per pancake onto the skillet; cook until bubbles form on the surface.
  6. Flip and cook the other side until pancakes are golden brown, about 2 minutes.
  7. Serve warm with butter and your favorite toppings.

Notes

For extra fluffiness, let the batter rest 5 minutes before cooking.
