Description

Ingredients

  • 3 lb corned beef brisket
  • 1 cabbage chopped
  • 4 carrots sliced
  • 4 potatoes cubed
  • 6 cups water
  • 1 large onion, quartered
  • 4 cloves garlic, smashed
  • 2 bay leaves
  • 1 tsp whole black peppercorns
  • 1 tsp mustard seeds
  • ½ tsp dried thyme

Instructions

  1. Place the corned beef brisket in a large pot and add water, onion, garlic, bay leaves, peppercorns, mustard seeds, and thyme.
  2. Bring to a boil, then reduce heat and simmer for 2 hours, skimming foam as needed.
  3. Add the potatoes and carrots, continue simmering for 30 minutes.
  4. Add the chopped cabbage and cook for an additional 15 minutes until all vegetables are tender.
  5. Remove the brisket, let it rest briefly, then slice against the grain and serve with the vegetables and broth.

Notes

For extra flavor, you can add a splash of Irish whiskey or a few whole peppercorns to the cooking water.
