Description

Ingredients

  • 1 tablespoon baking powder
  • 2 large eggs
  • 1 3/4 cups milk
  • 2 tablespoons melted butter
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. In a large bowl whisk together flour, baking powder, sugar, and salt.
  2. In a separate bowl beat the eggs, then add milk, melted butter, and vanilla extract; mix well.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined; the batter should be slightly lumpy.
  4. Let the batter rest for 5 minutes.
  5. Heat a non‑stick skillet over medium heat and lightly coat with butter or oil.
  6. Pour 1/4 cup of batter for each pancake; cook until bubbles form on the surface and edges look set, about 2‑3 minutes.
  7. Flip and cook the other side until golden brown, another 1‑2 minutes.
  8. Serve warm with butter and syrup.

Notes

For extra fluffiness, let the batter rest for 5 minutes before cooking.
