Instructions
- In a large bowl, whisk together flour, baking powder, sugar, and salt.
- In a separate bowl, beat the egg with milk, melted butter, and vanilla extract.
- Pour the wet mixture into the dry ingredients and stir until just combined; a few lumps are okay.
- Heat a non-stick skillet over medium heat and lightly grease with butter or oil.
- Pour 1/4 cup of batter onto the skillet for each pancake; cook until bubbles form on the surface.
- Flip the pancakes and cook until golden brown on the other side, about 1-2 minutes.
- Serve immediately with butter, maple syrup, and your favorite toppings.
