- 1 head cabbage
- 4 potatoes
- 4 carrots
- 1 onion

- 2 cups low-sodium beef broth

- 1 bay leaf
Instructions
- Heat vegetable oil in a large pot over medium heat.
- Sauté minced garlic for 1 minute until fragrant.
- Add corned beef and brown on all sides, about 5 minutes.
- Pour in beef broth and add bay leaf, then bring to a boil.
- Reduce heat to low, cover, and simmer for 2 hours.
- While corned beef simmers, chop cabbage, potatoes, carrots, and onion.
- Add chopped vegetables to the pot and continue simmering for 30-40 minutes.
- Remove bay leaf, season with black pepper, and serve hot.
