Description

A classic Irish-inspired one-pot meal featuring tender corned beef simmered with cabbage, potatoes, and carrots in a savory broth.

Ingredients

Scale
  • 2 lb corned beef
  • 1 head cabbage
  • 4 potatoes
  • 4 carrots
  • 1 onion
  • 2 tablespoons vegetable oil
  • 1 teaspoon black pepper
  • 2 cups low-sodium beef broth
  • 2 cloves garlic, minced
  • 1 bay leaf

Instructions

  1. Heat vegetable oil in a large pot over medium heat.
  2. Sauté minced garlic for 1 minute until fragrant.
  3. Add corned beef and brown on all sides, about 5 minutes.
  4. Pour in beef broth and add bay leaf, then bring to a boil.
  5. Reduce heat to low, cover, and simmer for 2 hours.
  6. While corned beef simmers, chop cabbage, potatoes, carrots, and onion.
  7. Add chopped vegetables to the pot and continue simmering for 30-40 minutes.
  8. Remove bay leaf, season with black pepper, and serve hot.

Notes

For optimal tenderness, avoid overcooking the corned beef. Vegetables should be fork-tender but not mushy.
