Description
A hearty, savory hash made with tender corned beef, golden potatoes, and caramelized onions, finished with a perfectly cooked egg on top.
Ingredients

- 2 cups corned beef, chopped
- 3 potatoes, diced
- 1 onion, chopped
- 2 tbsp butter
- 2 eggs
- Salt and pepper to taste
- Fresh parsley, chopped (optional)
Instructions
- Heat butter in a large skillet over medium heat.
- Add diced potatoes and sauté until they begin to soften, about 5 minutes.
- Stir in the chopped onion and cook until translucent, about 3 minutes.
- Add the chopped corned beef, season with salt and pepper, and cook, stirring occasionally, until the meat is browned and crispy, about 8 minutes.
- Create two small wells in the hash and crack an egg into each.
- Cover the skillet and cook until the eggs are set to your liking, about 4-5 minutes.
- Garnish with chopped parsley and serve hot.
Notes
For extra flavor, add a pinch of smoked paprika or a splash of Worcestershire sauce. Leftovers reheat well in a skillet.
