Description

A hearty, savory hash made with tender corned beef, golden potatoes, and caramelized onions, finished with a perfectly cooked egg on top.


Ingredients

  • 2 cups corned beef, chopped
  • 3 potatoes, diced
  • 1 onion, chopped
  • 2 tbsp butter
  • 2 eggs
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional)

Instructions

  1. Heat butter in a large skillet over medium heat.
  2. Add diced potatoes and sauté until they begin to soften, about 5 minutes.
  3. Stir in the chopped onion and cook until translucent, about 3 minutes.
  4. Add the chopped corned beef, season with salt and pepper, and cook, stirring occasionally, until the meat is browned and crispy, about 8 minutes.
  5. Create two small wells in the hash and crack an egg into each.
  6. Cover the skillet and cook until the eggs are set to your liking, about 4-5 minutes.
  7. Garnish with chopped parsley and serve hot.

Notes

For extra flavor, add a pinch of smoked paprika or a splash of Worcestershire sauce. Leftovers reheat well in a skillet.
