A comforting baked casserole that combines tender corned beef, creamy potatoes, and sharp cheddar for a hearty family meal.

- 2 cups cooked corned beef, diced
- 4 medium potatoes, thinly sliced
- 1 cup shredded cheddar cheese
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 cup milk
- 2 tbsp butter
- 1 tsp paprika
- ½ tsp black pepper
- ½ tsp salt
- ½ cup breadcrumbs (optional for topping)
Instructions
- Preheat oven to 375°F (190°C).
- In a skillet, melt butter over medium heat and sauté garlic and onion until softened.
- Add the diced corned beef and cook for 2 minutes, stirring occasionally.
- Whisk in milk, paprika, pepper, and salt; simmer for 3 minutes until slightly thickened.
- In a greased 9×13 inch baking dish, layer half of the sliced potatoes, then spread the corned beef mixture over them.
- Sprinkle half of the shredded cheddar cheese over the meat.
- Add the remaining potatoes on top, then pour any remaining sauce evenly.
- Top with the remaining cheddar cheese and breadcrumbs if using.
- Bake for 45 minutes, or until potatoes are tender and the cheese is golden and bubbly.
- Let stand 5 minutes before serving.
Notes
For extra flavor, add a splash of beer to the sauce or garnish with chopped parsley.
