  • 1½ cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon cinnamon
  • pinch salt
  • 3 large ripe bananas
  • ⅔ cup cottage cheese
  • ¼ cup hemp seeds
  • 2 eggs, lightly beaten
  • ¾ cup granulated sugar
  • ¼ cup vegetable oil
  • 1 teaspoon vanilla
  • ¾ cup pieces dark chocolate (approx)
  • 1 banana, ripe but firm, halved lengthwise

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt. Set aside.
  3. In a large bowl, mash the 3 ripe bananas with a fork until mostly smooth. Add cottage cheese, hemp seeds, beaten eggs, sugar, vegetable oil, and vanilla. Mix until well combined.
  4. Gradually add the dry ingredients to the wet mixture, stirring just until combined (do not overmix).
  5. Fold in dark chocolate pieces.
  6. Pour batter into prepared loaf pan. Place the halved banana (cut side up) on top of the batter, gently pressing it in slightly.
  7. Bake for 55-65 minutes, or until a toothpick inserted in the center comes out clean (a few moist crumbs are fine). If the top browns too quickly, loosely tent with foil after 40 minutes.
  8. Let cool in pan for 15 minutes, then transfer to a wire rack to cool completely before slicing.
