Ingredients

  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 tablespoon olive oil
  • 1 cup white rice
  • 2 cups water
  • Pinch of salt
  • 2 tablespoons butter
  • 3 cloves garlic (minced)
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated cheese (cheddar or parmesan)
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon chili flakes (optional)
  • Salt to taste
  • Broccoli florets
  • Carrots, sliced
  • Peas
  • Fresh parsley (for garnish)

Instructions

  1. Season the chicken cubes with salt, pepper, paprika, and garlic powder.
  2. Heat olive oil in a skillet over medium heat and sauté the chicken until golden and cooked through.
  3. Remove chicken and set aside.
  4. In the same pan, melt butter and add minced garlic, cooking until fragrant.
  5. Stir in heavy cream and chicken broth, scraping up any browned bits.
  6. Add grated cheese and stir until melted and the sauce thickens.
  7. Season with additional black pepper, chili flakes if using, and salt to taste.
  8. Add broccoli, carrots, and peas to the sauce, cooking until vegetables are tender-crisp.
  9. Meanwhile, rinse the rice and combine with 2 cups water and a pinch of salt in a pot; bring to a boil, then simmer covered for 15 minutes.
  10. Fluff the cooked rice and portion onto serving bowls.
  11. Top each bowl with the creamy chicken and vegetable mixture.
  12. Garnish with fresh parsley before serving.

Notes

For a lighter version, substitute half the heavy cream with low-fat milk. Add extra vegetables like spinach for more nutrition.
