Description

Ingredients

  • 2 tbsp butter
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 28 oz canned crushed tomatoes
  • 1 cup vegetable broth
  • 1 cup heavy cream
  • 1 tsp dried basil
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp olive oil
  • 1 tsp sugar (optional)

Instructions

  1. Heat butter and olive oil in a large pot over medium heat.
  2. Add chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in minced garlic and cook for 30 seconds until fragrant.
  4. Add dried basil and sugar, then cook for another 30 seconds.
  5. Pour in crushed tomatoes and vegetable broth, stir to combine.
  6. Bring the mixture to a simmer and let it cook for 15 minutes, stirring occasionally.
  7. Reduce heat to low and stir in heavy cream.
  8. Season with salt and pepper, then let the soup simmer gently for 5 minutes.
  9. Remove from heat and blend with an immersion blender until smooth.
  10. Serve hot, garnished with fresh basil if desired.

Notes

For a lighter version, substitute half-and-half for the heavy cream.
