- 1 medium onion, chopped
- 2 cloves garlic, minced
- 28 oz canned crushed tomatoes
- 1 cup vegetable broth
- 1 cup heavy cream
- 1 tsp dried basil
- ½ tsp salt
- ¼ tsp black pepper
- 1 tbsp olive oil
- 1 tsp sugar (optional)
Instructions
- Heat butter and olive oil in a large pot over medium heat.
- Add chopped onion and sauté until translucent, about 5 minutes.
- Stir in minced garlic and cook for 30 seconds until fragrant.
- Add dried basil and sugar, then cook for another 30 seconds.
- Pour in crushed tomatoes and vegetable broth, stir to combine.
- Bring the mixture to a simmer and let it cook for 15 minutes, stirring occasionally.
- Reduce heat to low and stir in heavy cream.
- Season with salt and pepper, then let the soup simmer gently for 5 minutes.
- Remove from heat and blend with an immersion blender until smooth.
- Serve hot, garnished with fresh basil if desired.
Notes
For a lighter version, substitute half-and-half for the heavy cream.
