Description

A light and elegant salad with crisp apples, creamy brie, toasted nuts, and a drizzle of honey vinaigrette.


Ingredients

  • 2 crisp apples (Honeycrisp or Granny Smith), thinly sliced
  • 4 cups mixed greens (arugula, spinach, or spring mix)
  • 6 oz brie cheese, sliced into wedges
  • 1/3 cup candied walnuts (or toasted walnuts)
  • 1/4 cup dried cranberries
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • Salt and black pepper to taste

Instructions

  1. Place mixed greens in a large salad bowl.
  2. Add sliced apples, brie wedges, walnuts, and dried cranberries on top.
  3. In a small bowl, whisk together olive oil, apple cider vinegar, Dijon mustard, honey, salt, and pepper until well combined.
  4. Drizzle the dressing over the salad just before serving.
  5. Toss gently and serve immediately.

Notes

For extra flavor, try adding roasted chicken slices for protein or swap walnuts with pecans. Best served fresh.
