Ingredients

- 2 crisp apples (Honeycrisp or Granny Smith), thinly sliced
- 4 cups mixed greens (arugula, spinach, or spring mix)
- 6 oz brie cheese, sliced into wedges
- 1/3 cup candied walnuts (or toasted walnuts)
- 1/4 cup dried cranberries
- 2 tablespoons olive oil
- 1 tablespoon apple cider vinegar
- 1 teaspoon Dijon mustard
- 1 teaspoon honey
- Salt and black pepper to taste
Instructions
- Place mixed greens in a large salad bowl.
- Add sliced apples, brie wedges, walnuts, and dried cranberries on top.
- In a small bowl, whisk together olive oil, apple cider vinegar, Dijon mustard, honey, salt, and pepper until well combined.
- Drizzle the dressing over the salad just before serving.
- Toss gently and serve immediately.
Notes
For extra flavor, try adding roasted chicken slices for protein or swap walnuts with pecans. Best served fresh.
