- 1 cup panko breadcrumbs
- 2 tablespoons grated Parmesan cheese

Instructions
- Pat the chicken filets dry with paper towels.
- In a shallow bowl combine flour, cornstarch, salt, pepper, garlic powder, and paprika.
- In another bowl whisk together the egg and milk.
- Place panko breadcrumbs and grated Parmesan in a third bowl.
- Dredge each chicken filet in the flour mixture, shaking off excess.
- Dip the filet in the egg wash, letting any excess drip off.
- Press the filet into the panko‑Parmesan mixture, ensuring an even coating.
- Arrange the coated filets on a plate and lightly spray both sides with cooking spray.
- Preheat the air fryer to 190°C (375°F).
- Place the chicken in the air fryer basket in a single layer; cook for 6 minutes.
- Flip the filets, spray the other side, and cook for an additional 5‑6 minutes until golden and internal temperature reaches 71°C (160°F).
- Rest for 2 minutes before serving.
Notes
For extra crispiness, spray the chicken again halfway through cooking. Serve with lemon wedges or a simple side salad.
