- 4 large bone-in, skin-on chicken thighs (about 2 pounds)
- Salt and pepper
- 1 tablespoon peanut or canola oil
- 2 garlic cloves, crushed
- ½ cup chicken stock or ¼ cup water
- 2 tablespoons fresh lime juice, plus wedges for serving
- 2 teaspoons maple syrup
- 3 tablespoons cold unsalted butter, cut into pats
- Parsley, cilantro, basil or mint leaves, for serving (optional)
Instructions
- Pat chicken thighs dry and season generously with salt and pepper.
- Heat oil in a large skillet over medium‑high heat.
- Add chicken, skin side down, and sear until golden and crisp, about 6–7 minutes.
- Flip chicken, add crushed garlic, and cook 1 minute.
- Pour in stock or water, scraping up browned bits; reduce heat and simmer 10 minutes, or until chicken is cooked through.
- Stir in lime juice and maple syrup; cook 1 minute.
- Reduce heat to low and whisk in cold butter pats until melted and sauce thickens. Remove from heat, sprinkle with fresh herbs, and serve with lime wedges.
Notes
Optional herbs: parsley, cilantro, basil, or mint. Adjust salt to taste.
