Ingredients

  • 4 cups all-purpose flour, divided
  • 2 tablespoons garlic salt
  • 1 tablespoon paprika
  • 3 teaspoons pepper, divided
  • 21/2 teaspoons poultry seasoning
  • 2 large eggs
  • 11/2 cups water
  • 1 teaspoon salt
  • 2 broiler/fryer chickens (31/2 to 4 pounds each), cut up
  • Oil for deep-fat frying
  • Optional: 1 cup buttermilk for marinating

Instructions

  1. Cut the chickens into 8 pieces each and pat dry with paper towels.
  2. In a large bowl combine flour, garlic salt, paprika, pepper, poultry seasoning, and salt; divide mixture in half.
  3. In a shallow dish whisk together eggs and water; set aside.
  4. Dredge each chicken piece first in the first half of the seasoned flour, then dip into the egg mixture, and finally coat with the remaining flour.
  5. Place coated chicken on a wire rack and let rest for 10 minutes to set the crust.
  6. Heat oil in a deep fryer or large pot to 350°F (175°C).
  7. Fry chicken pieces in batches, turning once, until golden brown and internal temperature reaches 165°F (74°C), about 8-10 minutes per batch.
  8. Remove chicken and drain on a paper towel-lined plate.
  9. Serve hot with your favorite sides.

Notes

For extra crispiness, let the coated chicken rest 10 minutes before frying; you can also marinate in buttermilk for 2 hours for added tenderness.
