- 4 cups all-purpose flour, divided
- 2 tablespoons garlic salt
- 1 tablespoon paprika
- 3 teaspoons pepper, divided
- 2–1/2 teaspoons poultry seasoning
- 2 large eggs
- 1–1/2 cups water
- 1 teaspoon salt
- 2 broiler/fryer chickens (3–1/2 to 4 pounds each), cut up
- Oil for deep-fat frying
- Optional: 1 cup buttermilk for marinating
Instructions
- Cut the chickens into 8 pieces each and pat dry with paper towels.
- In a large bowl combine flour, garlic salt, paprika, pepper, poultry seasoning, and salt; divide mixture in half.
- In a shallow dish whisk together eggs and water; set aside.
- Dredge each chicken piece first in the first half of the seasoned flour, then dip into the egg mixture, and finally coat with the remaining flour.
- Place coated chicken on a wire rack and let rest for 10 minutes to set the crust.
- Heat oil in a deep fryer or large pot to 350°F (175°C).
- Fry chicken pieces in batches, turning once, until golden brown and internal temperature reaches 165°F (74°C), about 8-10 minutes per batch.
- Remove chicken and drain on a paper towel-lined plate.
- Serve hot with your favorite sides.
Notes
For extra crispiness, let the coated chicken rest 10 minutes before frying; you can also marinate in buttermilk for 2 hours for added tenderness.
