- 1/2 lb. bacon or jowl, cut into chunks
- 1 lb. ground beef
- 1/2 cup chopped onion
- 1/2 cup brown sugar
- 1/2 cup ketchup
- 2 Tablespoons vinegar
- 1 Tablespoon mustard
- 1 teaspoon salt
- 16 oz. can of pork and beans
- 15 oz. can butter beans, drained
- 16 oz. can kidney beans, drained
- 15 oz. can lima beans, drained
Instructions
- In a skillet, cook the bacon chunks until lightly browned; transfer to the slow cooker.
- Add the ground beef to the skillet and brown, then drain excess fat and add to the slow cooker.
- Stir in the chopped onion, brown sugar, ketchup, vinegar, mustard, and salt until well combined.
- Pour the entire contents of the canned pork and beans into the slow cooker and mix.
- Add the drained butter beans, kidney beans, and lima beans, stirring gently to combine all ingredients.
- Cover and cook on low for 6–7 hours or on high for 3–4 hours, until the flavors meld and the beans are tender.
- Taste and adjust seasoning if needed, then serve hot.
Notes
For extra depth, add a splash of Worcestershire sauce or a teaspoon of smoked paprika. This dish freezes well for up to 3 months.
