Description

Ingredients

  • 1/2 lb. bacon or jowl, cut into chunks
  • 1 lb. ground beef
  • 1/2 cup chopped onion
  • 1/2 cup brown sugar
  • 1/2 cup ketchup
  • 2 Tablespoons vinegar
  • 1 Tablespoon mustard
  • 1 teaspoon salt
  • 16 oz. can of pork and beans
  • 15 oz. can butter beans, drained
  • 16 oz. can kidney beans, drained
  • 15 oz. can lima beans, drained

Instructions

  1. In a skillet, cook the bacon chunks until lightly browned; transfer to the slow cooker.
  2. Add the ground beef to the skillet and brown, then drain excess fat and add to the slow cooker.
  3. Stir in the chopped onion, brown sugar, ketchup, vinegar, mustard, and salt until well combined.
  4. Pour the entire contents of the canned pork and beans into the slow cooker and mix.
  5. Add the drained butter beans, kidney beans, and lima beans, stirring gently to combine all ingredients.
  6. Cover and cook on low for 6–7 hours or on high for 3–4 hours, until the flavors meld and the beans are tender.
  7. Taste and adjust seasoning if needed, then serve hot.

Notes

For extra depth, add a splash of Worcestershire sauce or a teaspoon of smoked paprika. This dish freezes well for up to 3 months.
