Tender, smoky crockpot BBQ chicken made with chicken fillet, barbecue sauce, and chicken broth, perfect for easy weeknight meals.

- 2 chicken fillets (about 1 lb)
- 1 cup barbecue sauce
- 1 cup chicken broth
- 1 teaspoon garlic powder
- 1 medium onion, sliced
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Season the chicken fillets with salt, pepper, and garlic powder.
- Heat olive oil in a pan and sear the chicken briefly on both sides.
- Place the sliced onion at the bottom of the crockpot.
- Add the seared chicken fillets on top of the onions.
- Pour the barbecue sauce and chicken broth over the chicken.
- Cook on low for 6 to 7 hours or on high for 3 to 4 hours until the chicken is tender.
- Shred the chicken with two forks and stir to combine with the sauce.
- Serve hot, optionally with coleslaw or cornbread.
Notes
For extra flavor, add a splash of apple cider vinegar or a pinch of smoked paprika before cooking.
