Description

Tender, smoky crockpot BBQ chicken made with chicken fillet, barbecue sauce, and chicken broth, perfect for easy weeknight meals.


Ingredients

  • 2 chicken fillets (about 1 lb)
  • 1 cup barbecue sauce
  • 1 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 medium onion, sliced
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Season the chicken fillets with salt, pepper, and garlic powder.
  2. Heat olive oil in a pan and sear the chicken briefly on both sides.
  3. Place the sliced onion at the bottom of the crockpot.
  4. Add the seared chicken fillets on top of the onions.
  5. Pour the barbecue sauce and chicken broth over the chicken.
  6. Cook on low for 6 to 7 hours or on high for 3 to 4 hours until the chicken is tender.
  7. Shred the chicken with two forks and stir to combine with the sauce.
  8. Serve hot, optionally with coleslaw or cornbread.

Notes

For extra flavor, add a splash of apple cider vinegar or a pinch of smoked paprika before cooking.
