- Peach BBQ Sauce:
- 4 dates, pitted
- ½ cup boiling water
- 2 Tbsp ghee (such as Pure Indian Foods ghee)
- ½ cup minced onion
- 3 cloves garlic, minced
- 1 (6-ounce) can tomato paste
- 1 (12-ounce) can tomato sauce
- 2 medium peaches, peeled and roughly chopped (or 2 cups frozen peach slices, thawed)
- ¼ cup apple cider vinegar
- ¼ cup Whole30-compliant Dijon mustard (such as Annie’s or 365 Everyday brand)
- 1 tsp smoked paprika
- 1 Tbsp chili powder
- ¼ tsp ground cumin
- 1 pinch ground cloves
- ½ tsp natural liquid smoke
- Sea salt and pepper, to taste
- Chicken:
- 2 lb boneless, skinless chicken breasts or thighs
- 1 cup Peach BBQ Sauce
- Slaw:
- 2 cups shredded cabbage or broccoli slaw
- 2 Tbsp avocado oil mayonnaise (such as Primal Kitchen Mayo)
- 2 Tbsp apple cider vinegar
- Pinch of sea salt, black pepper, and celery seed
Instructions
- Make the Peach BBQ Sauce: Soak pitted dates in boiling water for 5 minutes to soften, then blend until smooth. In a skillet over medium heat, melt ghee and sauté minced onion until soft. Add garlic and cook for 1 minute. Stir in tomato paste, tomato sauce, peaches, apple cider vinegar, Dijon mustard, smoked paprika, chili powder, cumin, cloves, and liquid smoke. Add the blended dates, season with salt and pepper, and simmer for 10-15 minutes. Blend until smooth if desired.
- Cook the Chicken: Place chicken in the crockpot. Pour 1 cup prepared Peach BBQ Sauce over the chicken. Cover and cook on low for 4-5 hours or high for 2-3 hours, until chicken is tender. Shred chicken and toss with sauce.
- Prepare the Slaw: In a bowl, combine shredded cabbage or broccoli slaw with avocado oil mayonnaise, apple cider vinegar, sea salt, black pepper, and celery seed. Toss until well coated.
- Serve shredded chicken with slaw on the side or piled on top for a delicious meal.
Notes
Peach BBQ Sauce can be made ahead and refrigerated for up to 1 week or frozen for longer storage. Try serving the chicken in lettuce wraps, over rice, or in a sandwich.
