Description

A tender, smoky pulled pork made in a slow cooker, perfect for sandwiches.

Ingredients

Scale
  • 3 lb pork roast
  • 1 cup barbecue sauce
  • 1 onion, sliced
  • 1 tbsp paprika
  • 1 tsp garlic powder
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup apple cider vinegar
  • 1/4 cup water

Instructions

  1. Pat the pork roast dry and season with paprika, garlic powder, salt, and pepper.
  2. Heat olive oil in a skillet over medium-high heat and sear the roast on all sides.
  3. Transfer the roast to the slow cooker and add sliced onion.
  4. Pour barbecue sauce over the pork and stir in apple cider vinegar and water.
  5. Cook on low for 8 hours until the meat is tender and shreds easily.
  6. Remove the pork, shred with two forks, and return to the cooker to mix with juices.
  7. Serve the pulled pork on buns or over rice.

Notes

Let the pork rest 10 minutes before shredding for extra juiciness.
