  • 1 cup long-grain parboiled rice
  • 1 cup canned pigeon peas, drained
  • 1 cup chicken broth
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tsp curry powder
  • 1/2 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1 tbsp vegetable oil
  • Salt and pepper to taste

Instructions

  1. Heat the oil in a large skillet over medium heat.
  2. Add the onion and garlic, sauté until fragrant and translucent.
  3. Stir in the curry powder, cumin, and smoked paprika; cook for 1 minute.
  4. Add the ground turkey, breaking it up with a spoon, and cook until browned.
  5. Pour in the chicken broth, bring to a simmer, and let it cook for 10 minutes.
  6. Stir in the rice and pigeon peas, cover, and simmer until the rice is tender and has absorbed the liquid.
  7. Season with salt and pepper, then serve hot.

Notes

For a spicier kick, add a pinch of cayenne pepper. Substitute basmati rice if you prefer a lighter texture. Leftovers store well in the refrigerator for up to 3 days and reheat gently on the stovetop or microwave. This dish pairs nicely with a side of steamed greens.
