- 1 cup canned pigeon peas, drained
- 1 cup chicken broth
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 tsp curry powder

- 1/2 tsp smoked paprika
- 1 tbsp vegetable oil
- Salt and pepper to taste
Instructions
- Heat the oil in a large skillet over medium heat.
- Add the onion and garlic, sauté until fragrant and translucent.
- Stir in the curry powder, cumin, and smoked paprika; cook for 1 minute.
- Add the ground turkey, breaking it up with a spoon, and cook until browned.
- Pour in the chicken broth, bring to a simmer, and let it cook for 10 minutes.
- Stir in the rice and pigeon peas, cover, and simmer until the rice is tender and has absorbed the liquid.
- Season with salt and pepper, then serve hot.
Notes
For a spicier kick, add a pinch of cayenne pepper. Substitute basmati rice if you prefer a lighter texture. Leftovers store well in the refrigerator for up to 3 days and reheat gently on the stovetop or microwave. This dish pairs nicely with a side of steamed greens.
