- 2 cups cooked short pasta (half a box)
- 3 hard-boiled eggs, chopped
- 1 ½ celery stalks, diced
- ½ small red onion, finely chopped
- ¼ cup green onions, chopped
- 2 tablespoons mayonnaise or Greek yogurt (to taste)
- 1 tablespoon honey mustard (or honey chicken sauce)
- ½ teaspoon smoked paprika
- ¼ teaspoon garlic salt (or to taste)
- Freshly ground black pepper, to taste
- Salt, to taste
- 1 tablespoon Dijon mustard (optional)
- 1 tablespoon lemon juice (optional)
- 2 tablespoons fresh parsley, chopped (optional)
Instructions
- Cook the pasta according to package directions, drain, and rinse under cold water; set aside.
- In a large bowl combine the chopped eggs, diced celery, red onion, and green onions.
- Add the cooled pasta to the bowl and toss to distribute evenly.
- Stir in mayonnaise (or Greek yogurt), honey mustard, Dijon mustard, lemon juice, smoked paprika, garlic salt, and pepper; mix until creamy.
- Season with additional salt to taste and adjust seasoning as needed.
- Fold in fresh parsley if using, then cover and refrigerate for at least 30 minutes to let flavors meld.
- Serve chilled as a side dish or light main course.
Notes
For a lighter version, substitute half of the mayonnaise with Greek yogurt. Adjust honey mustard amount for sweetness preference.
