- 6 hard-boiled egg yolks
- 1/4 cup mayonnaise
- 1 teaspoon dijon mustard
- zest of 1 lemon
- 2 teaspoons chopped pickled jalapenos
- salt and pepper
- canned fried onions
- smoked paprika
- 1 tablespoon lemon juice
- 1 tablespoon chopped fresh chives
- optional garnish: extra smoked paprika
Instructions
- Halve the hard-boiled eggs and remove the yolks, placing them in a mixing bowl.
- Mash the yolks with mayonnaise, Dijon mustard, lemon zest, lemon juice, chopped pickled jalapenos, chopped chives, salt, and pepper until smooth.
- Fold in a pinch of smoked paprika for subtle smokiness.
- Pipe or spoon the filling back into the egg white halves.
- Sprinkle each filled egg with a generous layer of canned fried onions for crunch.
- Finish with an additional dusting of smoked paprika for color and flavor.
- Serve immediately or chill for up to 2 hours before serving.
Notes
For extra crunch, toast the fried onions lightly before using. Adjust jalapeno amount to control heat.
