Description

Ingredients

  • 6 hard-boiled egg yolks
  • 1/4 cup mayonnaise
  • 1 teaspoon dijon mustard
  • zest of 1 lemon
  • 2 teaspoons chopped pickled jalapenos
  • salt and pepper
  • canned fried onions
  • smoked paprika
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped fresh chives
  • optional garnish: extra smoked paprika

Instructions

  1. Halve the hard-boiled eggs and remove the yolks, placing them in a mixing bowl.
  2. Mash the yolks with mayonnaise, Dijon mustard, lemon zest, lemon juice, chopped pickled jalapenos, chopped chives, salt, and pepper until smooth.
  3. Fold in a pinch of smoked paprika for subtle smokiness.
  4. Pipe or spoon the filling back into the egg white halves.
  5. Sprinkle each filled egg with a generous layer of canned fried onions for crunch.
  6. Finish with an additional dusting of smoked paprika for color and flavor.
  7. Serve immediately or chill for up to 2 hours before serving.

Notes

For extra crunch, toast the fried onions lightly before using. Adjust jalapeno amount to control heat.
