Instructions
- Slice the hard-boiled eggs in half lengthwise and remove the yolks.
- Place the yolks in a bowl and mash them with mayonnaise, yellow mustard, and a dash of hot sauce.
- Season the yolk mixture with salt and pepper to taste.
- Pipe or spoon the mixture back into the egg white halves.
- Top each with a small piece of crisp bacon and a sprinkle of chopped chives.
