Ingredients

- 2 dozen large eggs (12 eggs), peeled and separated
- 1/2 cup mayonnaise
- 3 tablespoons sweet pickle relish
- 3 tablespoons Dijon mustard (optional)
- 1/2 tablespoon hot sauce (optional)
- Kosher salt, to taste
- Freshly ground black pepper, to taste
- Paprika, for garnish
- Fresh chives, chopped, for garnish
Instructions
- Boil the eggs in water for 10 minutes, then transfer to an ice bath.
- Peel the eggs and cut them lengthwise.
- Remove the yolks and place them in a bowl.
- Mash the yolks with mayonnaise, relish, mustard, hot sauce, salt, and pepper until smooth.
- Pipe or spoon the yolk mixture back into the egg whites, forming even cubes.
- Sprinkle each cube with paprika and chopped chives.
- Chill for at least 30 minutes before serving.
Notes
For extra creaminess, add an additional tablespoon of mayo. Adjust seasoning to personal preference.
