Ingredients

  • 1/2 cup brown sugar, packed
  • 1 egg
  • 1 cup molasses
  • 2 1/2 cups all-purpose flour
  • 1 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1/2 tsp ground cloves
  • 1/2 tsp ground nutmeg
  • 1 cup hot water

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×9-inch baking pan.
  2. In a large bowl, cream together the butter and brown sugar until light and fluffy.
  3. Add the egg and molasses, and mix well.
  4. In another bowl, whisk together the flour, baking soda, salt, cinnamon, ginger, cloves, and nutmeg.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Stir in the hot water until the batter is smooth.
  7. Pour the batter into the prepared pan and spread evenly.
  8. Bake for 35–40 minutes or until a toothpick inserted in the center comes out clean.
  9. Cool in the pan before slicing and serving. Dust with powdered sugar or top with whipped cream if desired.

Notes

This gingerbread cake pairs beautifully with vanilla ice cream or a drizzle of caramel sauce. Store leftovers covered at room temperature for up to 3 days.
