A moist and warmly spiced gingerbread cake that’s perfect for the holidays or a cozy winter treat.

- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar, packed
- 1 egg
- 1 cup molasses
- 2 1/2 cups all-purpose flour
- 1 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1 tsp ground ginger
- 1/2 tsp ground cloves
- 1/2 tsp ground nutmeg
- 1 cup hot water
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×9-inch baking pan.
- In a large bowl, cream together the butter and brown sugar until light and fluffy.
- Add the egg and molasses, and mix well.
- In another bowl, whisk together the flour, baking soda, salt, cinnamon, ginger, cloves, and nutmeg.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Stir in the hot water until the batter is smooth.
- Pour the batter into the prepared pan and spread evenly.
- Bake for 35–40 minutes or until a toothpick inserted in the center comes out clean.
- Cool in the pan before slicing and serving. Dust with powdered sugar or top with whipped cream if desired.
Notes
This gingerbread cake pairs beautifully with vanilla ice cream or a drizzle of caramel sauce. Store leftovers covered at room temperature for up to 3 days.
