  • 5 medium heirloom tomatoes, sliced
  • 12 teaspoons salt (for sprinkling on tomatoes)
  • 3 tablespoons extra virgin olive oil (divided)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon dried oregano (divided)
  • 1 1/2 pounds fingerling potatoes, thinly sliced length-wise
  • 1 medium onion, diced
  • 2 teaspoons minced garlic
  • 2 eggs, lightly beaten
  • 1 cup shredded mozzarella cheese (divided)
  • 1 cup shredded Parmesan cheese (divided)
  • 2 1/2 tablespoons fresh basil, chopped
  • 15 ounces (about 2 cups) part-skim ricotta cheese
  • Fresh basil, for garnish (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Lay tomato slices on paper towels and sprinkle with salt; let sit for 15 minutes to draw out moisture.
  3. Heat 1 tablespoon olive oil in a skillet, add potatoes, onion, and garlic powder, and cook until slightly tender, about 5-7 minutes.
  4. In a mixing bowl, combine eggs, ricotta, 1/2 cup mozzarella, 1/2 cup Parmesan, chopped basil, garlic, onion powder, and 1/2 teaspoon dried oregano.
  5. Lightly grease a casserole dish with 1 tablespoon olive oil. Layer half the potato mixture, then spread the ricotta mixture over it.
  6. Top with salted tomato slices, then repeat with remaining ingredients.
  7. Drizzle remaining olive oil and sprinkle remaining mozzarella, Parmesan, and oregano on top.
  8. Bake uncovered for 35-40 minutes or until the top is golden and bubbling.
  9. Let cool for 10 minutes before garnishing with fresh basil and serving.

Notes

Patting the tomatoes dry helps avoid excess moisture. Letting the casserole rest improves texture when slicing.
