Description

A classic Frito Chili Pie made with hearty beef chili layered over crunchy corn chips and topped with melty cheese for the ultimate comfort food.


Ingredients

  • 1 lb ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper (optional)
  • Salt and pepper, to taste
  • 4 cups Fritos corn chips
  • 2 cups shredded cheddar cheese
  • 1 tbsp olive oil
  • Optional toppings: sour cream, diced onions, jalapeños, green onions

Instructions

  1. In a large skillet, heat olive oil and sauté onion and garlic until fragrant.
  2. Add ground beef and cook until browned, draining excess fat.
  3. Stir in chili powder, cumin, paprika, cayenne, salt, and pepper.
  4. Add beans, diced tomatoes, and tomato sauce. Simmer for 20–25 minutes, stirring occasionally.
  5. In a baking dish or serving bowls, layer Fritos corn chips at the bottom.
  6. Spoon hot chili over the chips.
  7. Sprinkle shredded cheddar cheese generously on top.
  8. Bake at 375°F (190°C) for 10 minutes or until cheese is melted and bubbly, or serve directly topped with cheese if preferred.
  9. Garnish with optional toppings like sour cream, diced onions, jalapeños, or green onions.

Notes

For a spicier version, add extra cayenne or diced jalapeños to the chili. This dish can also be made in individual bowls for easy serving.
