Description
A classic Frito Chili Pie made with hearty beef chili layered over crunchy corn chips and topped with melty cheese for the ultimate comfort food.

- 1 lb ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) diced tomatoes
- 1 can (8 oz) tomato sauce
- 2 tbsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp cayenne pepper (optional)
- Salt and pepper, to taste
- 4 cups Fritos corn chips
- 2 cups shredded cheddar cheese
- 1 tbsp olive oil
- Optional toppings: sour cream, diced onions, jalapeños, green onions
Instructions
- In a large skillet, heat olive oil and sauté onion and garlic until fragrant.
- Add ground beef and cook until browned, draining excess fat.
- Stir in chili powder, cumin, paprika, cayenne, salt, and pepper.
- Add beans, diced tomatoes, and tomato sauce. Simmer for 20–25 minutes, stirring occasionally.
- In a baking dish or serving bowls, layer Fritos corn chips at the bottom.
- Spoon hot chili over the chips.
- Sprinkle shredded cheddar cheese generously on top.
- Bake at 375°F (190°C) for 10 minutes or until cheese is melted and bubbly, or serve directly topped with cheese if preferred.
- Garnish with optional toppings like sour cream, diced onions, jalapeños, or green onions.
Notes
For a spicier version, add extra cayenne or diced jalapeños to the chili. This dish can also be made in individual bowls for easy serving.
