Description

Juicy roasted chicken pieces infused with garlic and fresh herbs, perfect for a comforting family dinner.


Ingredients

  • 8 chicken pieces (thighs, drumsticks, or breasts)
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tsp rosemary
  • 1 tsp thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 lemon, halved
  • 4 carrots, chopped
  • 4 potatoes, quartered

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. In a large bowl, combine olive oil, minced garlic, rosemary, thyme, salt, and pepper.
  3. Toss the chicken pieces in the herb mixture until evenly coated.
  4. Arrange the chicken on a baking sheet, skin-side up, and place lemon halves around them.
  5. Add chopped carrots and potatoes around the chicken on the same sheet.
  6. Roast for 45–50 minutes, or until the chicken reaches an internal temperature of 75°C (165°F) and the skin is golden brown.
  7. Let rest for 10 minutes before serving.

Notes

For extra crispiness, broil the chicken for 2–3 minutes at the end of cooking.
