Ingredients

- 8 chicken pieces (thighs, drumsticks, or breasts)
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 tsp rosemary
- 1 tsp thyme
- 1 tsp salt
- 1/2 tsp black pepper
- 1 lemon, halved
- 4 carrots, chopped
- 4 potatoes, quartered
Instructions
- Preheat the oven to 200°C (400°F).
- In a large bowl, combine olive oil, minced garlic, rosemary, thyme, salt, and pepper.
- Toss the chicken pieces in the herb mixture until evenly coated.
- Arrange the chicken on a baking sheet, skin-side up, and place lemon halves around them.
- Add chopped carrots and potatoes around the chicken on the same sheet.
- Roast for 45–50 minutes, or until the chicken reaches an internal temperature of 75°C (165°F) and the skin is golden brown.
- Let rest for 10 minutes before serving.
Notes
For extra crispiness, broil the chicken for 2–3 minutes at the end of cooking.
