Succulent chicken skewers marinated in a creamy garlic mayo, then grilled and brushed with rich garlic parmesan butter.

- ten 5 inch skewers
- 2 lbs Chicken Filets, frozen and cut into thin slices using a knife while frozen
- ¼ cup mayonnaise
- 2 tbsp olive oil
- 4 garlic cloves pressed
- 1 lemon zested
- 2 tsp kosher salt
- ½ tsp ground pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp smoked paprika
- 2 tsp honey granules
- 1 stick ½ cup unsalted butter
- 6 garlic cloves pressed
- 3 tbsp fresh minced parsley
- ⅓ cup freshly grated parmesan cheese
Instructions
- Soak the skewers in water for 10 minutes to prevent burning.
- In a bowl combine mayonnaise, olive oil, pressed garlic, lemon zest, kosher salt, ground pepper, garlic powder, onion powder, smoked paprika, and honey granules; whisk until smooth.
- Add the chicken slices to the marinade, toss to coat, and refrigerate for 30 minutes.
- Preheat a grill or grill pan to medium‑high heat.
- Thread the marinated chicken onto the soaked skewers.
- Grill the skewers 5–6 minutes per side, until the chicken is cooked through.
- While the chicken grills, melt butter in a saucepan, add the remaining pressed garlic, minced parsley, and grated parmesan; stir until melted and combined.
- Brush the hot skewers with the garlic parmesan butter and serve immediately.
Notes
Serve with grilled vegetables or a fresh salad for a complete meal.
