  • 1 1/3 cup heavy cream
  • 2 teaspoons red pepper flakes (or to taste)
  • 2 teaspoons dried basil
  • Salt and pepper to taste
  • 1/2 cup freshly grated parmesan (more to taste)
  • 2 tablespoons unsalted butter
  • Pasta water
  • Optional garnishes: finely chopped parsley and red pepper flakes

Instructions

  1. Cook the pasta according to package directions. Reserve 1 cup of pasta water, then drain.
  2. In a large skillet, heat the olive oil over medium heat.
  3. Add the minced garlic and cook for 1–2 minutes until fragrant.
  4. Stir in the tomato paste and cook for 4–5 minutes, stirring until it darkens slightly.
  5. Pour in the heavy cream and add the red pepper flakes, dried basil, salt, and pepper. Mix well.
  6. Let it simmer for 2–3 minutes on low heat.
  7. Add the butter and stir until melted and smooth.
  8. Add the cooked pasta to the sauce along with some reserved pasta water until desired consistency is reached.
  9. Stir in the grated parmesan until melted and fully combined.
  10. Serve warm, garnished with fresh parsley and extra red pepper flakes if desired.

Notes

Use full-fat cream for the richest texture. Adjust chili flakes to your spice preference.
