  • 1 lb ground turkey
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1 (24 oz) jar marinara sauce
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions

  1. Preheat the oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. Cook the gluten-free penne pasta according to package directions, drain, and set aside.
  3. In a large skillet over medium heat, heat olive oil and sauté garlic until fragrant, about 1 minute.
  4. Add ground turkey, breaking it up with a spoon, and cook until browned, about 5-7 minutes. Season with oregano, basil, salt, and pepper.
  5. Stir in marinara sauce and simmer for 5 minutes.
  6. In a large bowl, combine cooked pasta, turkey sauce mixture, ricotta, and half of the mozzarella cheese. Mix well.
  7. Transfer the mixture to the prepared baking dish and top with the remaining mozzarella and Parmesan cheese.
  8. Bake for 25-30 minutes, or until the cheese is bubbly and golden brown.
  9. Garnish with fresh basil leaves and serve warm.
