Description

These Gluten Free Meatballs with Ground Turkey are juicy, herb-packed, and incredibly flavorful. Made with fresh basil, thyme, and parsley, they come together quickly in one bowl. Perfect for meal prep, these tender meatballs are naturally gluten-free, paleo-friendly, and can be made AIP-compliant by omitting pepper and red pepper flakes.   • ¼ cup fresh basil leaves
  • 1 TBSP fresh thyme
  • 1 TBSP fresh parsley
  • 1 medium yellow onion, roughly chopped
  • 3 cloves garlic
  • 1 lb ground turkey
  • 1.25 tsp sea salt
  • ½ tsp dried oregano
  • ½ tsp black pepper (omit for Core AIP)
  • ¼ tsp red pepper flakes (optional, omit for AIP)
  • 1.5 TBSP olive oil

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a food processor, combine fresh basil, thyme, parsley, onion, and garlic. Pulse until finely chopped.
  3. In a large bowl, combine ground turkey, the herb-onion mixture, sea salt, dried oregano, black pepper (if using), and red pepper flakes (if using). Mix gently with your hands until just combined – do not overwork.
  4. Roll mixture into 1.5-inch meatballs (about 18-20 meatballs) and place on prepared baking sheet.
  5. Drizzle or brush meatballs with olive oil.
  6. Bake for 15-18 minutes, until golden brown and cooked through (internal temperature reaches 165°F / 74°C).
  7. Serve warm with your favorite sauce or enjoy as is.

Notes

Tips: For extra browning, broil for 1-2 minutes at the end. Substitutions: Use ground chicken or lean ground beef instead of turkey. Replace fresh herbs with 1 teaspoon dried each if needed. AIP modifications: Omit black pepper and red pepper flakes. Storage: Store in an airtight container in the fridge for up to 4 days, or freeze for up to 3 months. Reheat in the oven or microwave.
