- 2 Chicken filets (about 1 lb)
- 2 tbsp Extra Virgin Olive Oil
- 1 tbsp Lemon Juice
- 3 cloves Garlic, minced
- 1 tbsp Dried Oregano
- Salt and Black Pepper to taste
- 1 cup Cherry Tomatoes, halved
- 1 English Cucumber, thickly sliced
- 1 Red Bell Pepper, thickly sliced
- 1 Yellow Bell Pepper, thickly sliced
- ¼ Red Onion, thinly sliced
- 4 oz Feta Cheese, cubed
- ¼ cup Kalamata Olives
- 2 tbsp Tzatziki or Greek Yogurt
- Fresh Parsley and Aleppo Pepper, for garnish
Instructions
- Combine olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper in a bowl; add chicken and marinate for 15 minutes.
- Heat a grill or grill pan over medium-high; cook chicken 6-7 minutes per side until internal temperature reaches 165°F (75°C), then rest and slice.
- Arrange cherry tomatoes, cucumber, red bell pepper, yellow bell pepper, and red onion in a serving bowl.
- Add cubed feta, Kalamata olives, and a drizzle of tzatziki or Greek yogurt.
- Top with sliced grilled chicken and garnish with fresh parsley and a pinch of Aleppo pepper.
- Serve immediately and enjoy.
Notes
Can be served warm or cold; feel free to swap yogurt for tzatziki for extra tang.
