Ingredients

  • 2 Chicken filets (about 1 lb)
  • 2 tbsp Extra Virgin Olive Oil
  • 1 tbsp Lemon Juice
  • 3 cloves Garlic, minced
  • 1 tbsp Dried Oregano
  • Salt and Black Pepper to taste
  • 1 cup Cherry Tomatoes, halved
  • 1 English Cucumber, thickly sliced
  • 1 Red Bell Pepper, thickly sliced
  • 1 Yellow Bell Pepper, thickly sliced
  • ¼ Red Onion, thinly sliced
  • 4 oz Feta Cheese, cubed
  • ¼ cup Kalamata Olives
  • 2 tbsp Tzatziki or Greek Yogurt
  • Fresh Parsley and Aleppo Pepper, for garnish

Instructions

  1. Combine olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper in a bowl; add chicken and marinate for 15 minutes.
  2. Heat a grill or grill pan over medium-high; cook chicken 6-7 minutes per side until internal temperature reaches 165°F (75°C), then rest and slice.
  3. Arrange cherry tomatoes, cucumber, red bell pepper, yellow bell pepper, and red onion in a serving bowl.
  4. Add cubed feta, Kalamata olives, and a drizzle of tzatziki or Greek yogurt.
  5. Top with sliced grilled chicken and garnish with fresh parsley and a pinch of Aleppo pepper.
  6. Serve immediately and enjoy.

Notes

Can be served warm or cold; feel free to swap yogurt for tzatziki for extra tang.
